Drunk over two days, Zalto universal. So good. This time it had notes of old wood and salt-crusted brioche (like an old palo cortado!). Complex, lively, great food wine.

Drunk over two hours out of Zalto universal. Deep yellow. Nose changed a lot with time and temperature (it actually was best at 14 degrees), from something spicy and savoury, like an aromatic version of a manzanilla texture. Then it had a slightly oxidised note, then something sweet and deep like a vieille prune; and a multitude of other aromas including, like a kind of framework, the dark notes of spontaneous fermentation.
