Ontario sparkling wine is coming of age. This is one of the first and still a favourite, especially with salmon.

Belle bouteille. Bon rapport QP.

Subtle and complex, earthy nose of apple skin and walnut. Fine, persistent, minerally palate and finish. Deep and complex; lovely now and ages beautifully too. 4/5

One of the best rosé bruts to come out of Ontario has undergone a make-over … thankfully it’s not what’s in the bottle that has changed – instead it’s the outside packaging. The label is now a more prominent colour, a cross between baby and sky blue, eye-catching, but not necessarily better looking – like it or not the one positive thing you can say about it is that you won’t miss it on the shelf. As for what’s in …

delicious! A soft yet dry brut sparkler with medium bead, fine mousse, and a chalky strawberry and melon palate.

High quality. Slightly more grapefruit notes than the regular brut.

Salmon-peach, lively fine mousse; bread dough, apples, strawberries, minerals; apple, yeast, minerally, light body, balanced acidity, clean lingering finish. Everything from the colour, residual sugar, toasty notes, balance to clean finish made this beautiful! Better than the blanc.

Drank new year's eve, this was a great sparkler that paired extremely well with food. Drank through a cheese course and into a mixed green salad it was a perfect accompanyment.

Nice. Fine beads of bubbles, nice mousse, generally pleasant but not profound.
