In the beginning it showed the kind of maturing aromas that are at first a bit hemmed in by its long stay in the bottle. It quickly opened up to a wonderful and surprisingly fresh wine that went well with all the dishes of Mielcke & Hurtigkarl's seven course menu, except for the ones with a fair amount of chili.

Pall Mall 67, Singapore. Red berries, very fine mousse. Lychee. Less obviously peppery than previous releases of this. A very clean property my Japanese guests observed. Very sapid. The Val de Vilaine is always very consistent if not the most consistent in the range.

The one with DG's birthday and the best suckling pig in SG (IT Paragon) : Lovely start to the dinner. Nicely rounded out (I got to dinner late) by the time I arrived with bouquet and palate showing apples, nashi pear and almonds. Solid pedigree here with good concentration and density with good acidic giving this the lift it needs. Drinking superbly!

Dibbs' birthday part 2 : Brought as an aperitif. Initially a little lean and acidic, but put on weight beautifully with air and at a warmer temperature. Very pretty, precise orchard fruit with a round texture, seamless and at peak. My cost for this was under S$100...

Lovely nose with a lot of fruit, citrus, minerals, spices, toast, and some riper notes of stone fruit. Nice acidity on the palate with more minerals, orange, brioche, and lemon flavors. Long finish. Excellent bottle of Champagne! Complex and interesting, it lingers on the palate.

Charleston Offlineorama IX; 10/16/2024-10/19/2024 (Various locations) : Funny that Michael C and I took a sniff, looked at each other and said in unison, “Coche.” Once the match goes away, there is a teasing hint of sweet, which never emerges, but leads you to great spices and sneaky white peaches. Finish is long; acids are pure.

Absolutely stunning Cédric Bouchard and probably one of the best I’ve ever had. Straddles the perfect middle ground of having tremendous energy and rounded tertiary complexity. It’s like biting into a meticulously crafted caramel lemon tart, the bottle was passed around and vapourized in a flash.

Allemand v Chave Los Angeles edition : Served from magnum. Absolutely shocked how youthful it is out of magnum compared to 750ml. Super bright acidity and high-toned yellow fruit with citrus zest, none of the apple notes I'm typically accustomed to. Much more energy and bubbles than out of 750 as well, just streams new and primary. It was a delicious wine don't get me wrong, but it's totally different out of mag than 750.

Return to Willamette; 7/2/2023-7/8/2023 (Portland & Willamette) : Wonderful start to the dinner and so fun to get to drink one of these. Much fewer of them around these days. The genius of the wine is it really does feel like wine. Best served not too cold. And benefits from air and time in the glass. A bit of the herbal and more nuanced in style. Drinks well.

This was a great changeup from the Cote de Bechalin. This shows a bit more tension and spring-like qualities with white peaches, pears, red apples, strawberries, red flowers, acacia flowers, mineral notes, toast, vanilla, saline, jasmine, and biscuits. My last bottle from a case (remember when you could get a case?) and probably the worst of the bunch. Of course possible that it was an "off" bottle, but it just seemed tired; the midpalate intensity wasn't there and it came across just a tiny bit flabby. Some have suggested that these wines are best in their first few years, and perhaps that's right. It's a shame because a bottle two years ago was singing.

Label says wine is 2010, disgorged in 2017. A bit rough on opening but these wines always need significant air. Lovely red fruits and perfect balance, quiet but great energy and persistence. Was best three hours open when the nose was a basket of wild strawberries with cream. There’s no chalk or salt here, it’s a different and to me, very quiet minerality.

Drank this a few days after Val Vilaine ‘17. This tasted like a colder vintage for sure. Lots of chalky minerals to this, red skinned apples. Not the same level of ripeness, concentration or acidity as in 17 VV. A little bit more finesse here though. Really easy to drink.

Drank on New Years in Miami with davey, Reese, mike, nay, and stone crab. I don’t really know anything about champagne so bought this to see if there was anything revelatory, but didn’t get there. One of my last remaining bottles from a case, I wonder if I squandered the earlier ones. I think this showed the best of any of my bottles, as it seemed so well integrated. It has an unexpected lightness for a pinot noir--at least on palate entry--but closed with red fruits and tons of minerality. So fresh and clean. Invigorating.
