Auclair Winery, Left Blend, Red Mountain

Nice dark fruit. A bit of tang on the back end. My guess is this would open up with decanting.

Served with Easter wagu Corned Beef and Cabbage (delayed from St. Patricks day due to scheduling conflict) Perfect pairing. I really couldn't imagine this being better. The Cab Franc component of the wine really shined with the meat and the pairing rocked. Complex, layered fruit, higher acidity, long complex finish. All combined to show off the rich beef flavors.

Nose is lovely with aromatic complexity that pours from the glass in waves of dark spicy fruit that continue to evolve as you are drawn back again and again to study its complexity. Palate showed layers of spicy dark fruit with layered complexity and a long dry finish that shows significant Red Mountain tannin structure.
