A private lunch (Restaurant Counter71, London, UK) : Silvery colour; gentle rice sweetness on the nose, mountain air, melon and flowers, juicy and supple, elegant and easygoing, light on its feet in spite of 16% ABV, hint of salt; lighty savoury finish, very good length.

Impressive for sure and firm, bright and carries itself very well with good. This is a very well rounded expression and this is a proper food sake. Solid. Tech Specs: Alc : 16% Polishing Ratio : 50% Bottled Feb 2024

A sake which uses Nakadori, the middle fraction of the filtration process, to produce the purest and most refined rice wine. Served in Gabriel Gold glasses (upon request). It really delivers in the(se) glass(es) - elegant and silky-smooth, melon and pear flavours, flowers and a hint of honey, harmonious and firm, compact and energetic, lovely hint of sweetness, ever so slightly warm on the …
