A perfectly fine mousse carries forward of nose of brioche and yeasty dough that is seamlessly interwoven with hits of green apple and stone fruit. Complementary aromas of salinity and oyster brine round out the bouquet. On the attack, the palate is enveloped by notes of fresh baked bread, buttered toast, and green jolly rancher.
