After being open for a few days there is much more fruit and less earthiness coming through on the nose. A lot more pomegranate on the palate and very meaty on the mid-palate. Finish is still short but with more fruit. Drank this together the the '07 which had lots of sediment while this had none. This had slightly milder tannins.

Minerality, earthiness and licorice on the nose opening up to strawberry, pomegranate, black pepper and leather. Bright and tart cherry and cranberry with minerality and noticeable acidity on the palate. Medium body and tannins with a short finish.

Just received the Avec Eric cookbook by Eric Ripert and made the roasted chicken with za'atar stuffing. The recipe recommended paring with a dolcetto so opened this. It paired very, very well. Very fruit forward wine that went well with the earthiness of the Middle Eastern spice. Slight cherry on the noise. Very smooth and finishes with a little tartness on the palette. Also tasted hint of licorice. Great wine for everyday drinking now.

Corkscrew Tasting: The Wines of Azienda Agricola Paitin, with Giovanni Pasquero-Elia (The Princeton Corkscrew Wine Shop, Palmer Square) : Medium ruby in the glass, this wine had a reticent nose that yielded a tone of pure cherry. In the mouth it was light-bodied, with med+ woody tannins and a bitter aftertaste. Might open up more if decanted (don't know why it wasn't). Range: This is tough, because I don't know how it will age or develop in the glass, but …
