A private dinner (Restaurant Trees, Amsterdam, NL) : Miyanishiki rice, polishing ratio 59%, moto created according to the Akita Kimoto method (a mechanised version of the traditional Kimoto method), SMV +3, acidity 1.7, 15% ABV, bottled June 2023. Gently sweet, soft but fresh, dry finish, rich in umami but not funky.
