Domaine de Saint Pierre (Fabrice Dodane) Arbois Chapon

Golden yellow with an orange hue. Very oxidised with peachy white mould cheese. A delicate oxidised acidity balances the wine which displays several layers of preserved and over ripe white and yellow fruit. Not entirely unlike Chateau Macle. Definitely tertiary and should be consumed in the near future for full potential.

Chardonnay from natural farming, aged on the lees and bottled unfiltered and without sulphite, 12% vol. Restaurant Le Vivant. PnP, needs some minutes to open. On the nose it starts with ripe apples and yeasty notes, gets pears and a suggestion of petrol with more air, on the palate medium acidity, creamy and medium to long finish with a slightly tannic grip. Salted Popcorn, flint and lemon zest on the nose. Palate with a complex balance of flavors, among them fresh bread, butter, honey, lemon, ripe apple and fragrant herbs like basil as well as a touch of smokiness. Really nice!
