Oudiette x Filles Champagne Blanc de Blancs Extra Brut Uni Terre II

Lovely vibrant nose of citrus and toffee apples. The texture on the palate is fabulous with layers of honeycomb, waffle, brioche etc. and then great vigour and acidic drive through the middle. Nice clean finish. This is excellent.

Quite delicious and this went fast. Very Blanc des Blancs provile with lemon curd and cupcake batter. Well judged dosage (minimal, like 2g/L) and no discernible wood. I liked it and should age well.

Steak, Truffles, Bubbles, and Barolo (Portland, Oregon) : The nose is fresh and elegant with rounded tones of Peaches, pears, nectarines, apples, baking spices, vanilla beans, toast, and some white flowers. There is good depth and poise to the nose with a real attractive quality. The Medium bodied feel is vibrant and balanced with tart, high acidity. This is lovely and open-knit with a fresh style that is to be drunk over the mid-term.

This is very good! On the first day it started out harsh with a bit stiff mousse that came bubbling out when I opened the bottle but it came out as nicely austere with mote air and temperature. Ginger, banana peel, green apple, lemon and saltiness. Long and refreshing aftertaste. On fat three more lemon curdy and creamy, with a little vanilla. Still sharp!

Didn’t take notes but from memory a blanc de blancs with a lot going for it, both airy and intendent, nice acidity, more ginger lemon and chalk than anything on the more rich and ”yellow” side. An interesting new producer.

By the glass at restaurant -med gold -quinine lemon -med+ acidity, remarkably frothy mousse bright lemon verbena quinine -singular wine, OK
