Rich gold. On the nose, pronounced aromas of dried figs and apricots, marmalade, orange zest, black currants, sweet chestnuts and hazelnuts. Rich fruit on the palate with notes of honey and nuts, bound in a sweet gripping astringent frame, medium plus acids, very long winding aromatic finish with lovely aromatic back notes. Utterly compelling.

Jura night (Won Kok Restaurant) : The oldest vin jaune I've tried to date, and what a special treat. Fino-like nose, but so much more elegant and pure, without any burn of alcohol. Palate is precise, intense, and elegant. Salty minerals flowing through a field of hay, with lemons, green apples, flowering quince. Some chamomile and curry leaf around the edges. Jura Tasting (Won Kok Restaurant, San Francisco) : Beautiful and complex nose with orchard fruit, hazelnut, lemon, and hay. Great acidity on the palate with great precision, more lemon notes, some nutty flavors, and sherry notes. Long finish. Outstanding wine! This is very complex and beautiful and should actually continue to improve with age. It's very elegant and surprisingly shows quite little oxidative character, compared to other Vin Jaune and especially compared to the 2005 Puffeney next to it.

As soon as the cork is out, there is a quite intense nose of almond, sherry. Straw-golden in color. On the palate toasted almond, vanilla, lees, smoke. Nice acid in balance with the other components. I am still calibrating to Jura wines: while the flavor profile is not to my personal taste, this is a well-crafted glass of wine and the age has mellowed an integrated its components well.

Oxidative on nose. Wallnut, apricot, dough, whisky on nose. Palate wallnut, bready yeasty dough, some mandarin skin. Nice balance and good complexity. Not a crowd pleaser for the modern palate but clearly excellent quality.

A mostly Jura night : Probably the first vin jaune that I liked. Fresh and not too oxidative, the high acidity brought a sharp focus to the wine that I liked. Very quaffable and thought it would've been perfect with some cheese (got some durian instead, not complaining!).

Lovely vin jaune, first sip was a little cold (cellar temp). Didn't quite have the aromatic sparkle of some of the other vin jaune I have had. Let's see how it evolves.

Decided to purposefully enjoy my first bottle of Vin Jaune with two good friends and the pairing of quality cheese. For cheese, we had on hand DiBruno Brothers' aged Gruyere (great pairing) and Adarre (goat/sheep mix). The Chalon was decanted 1.5 hours before first sip, which emphasized its sharp flavors of oxidation, like a smoky fino sherry. Repas entre amis : Le héros de la soirée. Nez très ouvert, noix et curry avec une pointe de douceur qui donne sa cohérence à l'ensemble. En bouche, c'est l'équilibre qui frappe, un mariage de puissance et de finesse avec une balance parfaite entre acidité et rondeur. Une très grande bouteille.

Semble entré dans une phase intermédiaire : encore des souvenirs de la facilité et buvabilité, presuqe légèreté initiale, mais commence à montrer des signes d'évolution vers la noix prononcée. Toujours très bon, mais pas complètement en place à ce stade. Oublier les autres bouteilles 3/4 ans avant de regoûter.
