PnD let air for 3hrs. Consistent with previous note. Big and lean. Great fruit with tons of complexity. Lingering sneaky grippy finish with plum and cardamon. Beautiful with tons of life ahead. Rack of elk with blackberry sauce needed match.

Blackberry, blackcurrant, plum on the nose. Very smooth mouth feel, velvety. Some sage notes and a wild blueberry on the palate. Touch of leather or smoke. Drinking a little young now, would benefit from laying down at least 3 years just to smoothen it out as it's tasting a little hot right now.

PnD let air for 2hrs Clear. Deep ruby. Clean. Medium(+) intensity with of incense plum blackberry tar and sage. Dry. Medium alcohol. Medium tannins. Medium acidity. Medium body. Medium intensity with flavours of blackberry black tea sage and milk chocolate. Medium(+) finish with blackberry and black tea. Very good. Drink now suitable for further ageing. Elegant and grippy. This is just a baby that improved with more air.
