I agree with the other reviews that compare this to White Burg. Fresh baked bread, wax, butter, ripe melon, ripe white peach and ripe apricot on nose. Medium + intensity of aromas. The palate shows orange juice, lemon juice, lime juice , star fruit, matchstick, wax, butter, fresh tarragon yeast toward finish. Tasted blind, and of interest to note, was paired alongside the 2015 Doyard Clos de l'Abbaye. The Fombres evolved with air. At first, an aromatic of pickle juice....sounds odd but this was my reaction. It then evolved to something more akin to a reductive/matchstick with some toasted wood laced through it. blind: thought white burg, never would have guessed still champagne. Great treat. Nose is matchstick and the palate is green apple, pineapple, tropical and it just keeps moving around. Maybe stone fruit for a bit. Nice.

Served blind by Seiber. I immediately assumed this was either white Burgundy or Oregon chardonnay. Lots of reduction and notes of flint, vanilla, lemon, florals, and chalk. It's medium bodied, bright, and precise on the palate. Figured it was a recent vintage, like 2016+. My mind immediately went to Walter Scott Seven Springs, but I was pretty confident it was a white Burg. To my surprise, it was a still Champagne. Fascinating to know what you don't know.
