Paul searched high and low for this bottle. There's one in Paris and two in London. Out of nowhere a couple popped up in New York. Pale yellow color. Nice balance of fruit and acid. Light chalk. Great experience

Paul's Annual Champagne Tasting (2025 edition - All 7 Cepages) (At Paul's Place) : April 2022 disgorgement, 100% Arbanne. My buddy who curated the tasting yesterday had to really turn over a lot of rocks to find someone who was selling 100% Arbanne. My main goal was to taste a rare 2001 millesime (one of the worst vintages ever). But since the shop offered other vintages too I decided to try a small vertical. Dg. 12.11.2008 At first some pleasant but subtle fruit puree on the bouquet. Palate had a rather austere tendency for a supposedly quite good vintage. Some spicy blood orange with time... On the second day I would have said there is also some maderization going on here.

Nose of crisp pear, green apple, citrus, yeast, toast. Off dry, tiny sweet.. citrus notes, lemon, yeast, high acid. Delightful delicate flavors. Good with pork, brunch, procciuto.

Pleasant quaff for me, but the spouse is the bubbles fan and she definitely wants more at this price point.

For the love of CHEESE! My god, this smells exactly like Comte. Blindfolded, you'd swear you were smelling cheese. Which is a novelty, but not exactly what I'm looking for in champagne. Though if you're drinking a champagne made from 100% arbanne (one of the more obscure grapes allowed under the AOC), you aren't exactly looking for champagne. After the cheese, it's a dessert course of somewhat over-dosaged, under-structured champagne. There is a certain creamy, richness to this which I …
