First, use a large well-shaped glass. This is a beautifully crafted Médoc in a very great vintage: a blend of Cabernet Sauvignon, Merlot, and fully ripe Petit Verdot (the rare, late-flowering variety admired for the role it plays in some of the greatest wines of Margaux). In the glass, the Château Sipian has a glistening dark purple color, almost black in the center, with flashes of shimmering ruby near the edge.
