Westcave Cellars Cabernet Sauvignon

Opened and decanted for two hours. Still somewhat closed but opened well as the night wore on. Dark fruit on the nose. Seems to be improving with a little age. I doubt this will last 20 years but I think it needs a couple more years to really show its best. For a new winery with a new winemaker this shows lots of promise. I wouldn’t want to put this wine up against California or Washington wines, but when compared to other Texas wines, it does well. This is one of the few Texas wines that isn’t overly sweet, and actually has some tannins to it. Westcave is relatively new, so I’ll be interested to see how the vineyard evolves as the owner/winemaker gets more experience.
