A fine bead and what seems to be a lower than typical level of carbonation. Great aromatics ranging the full spectrum from minerals to appley fruit and flowers, although there's not much in the way of yeasty/doughy notes here. Exquisitely balanced and lemony flavors end with a stiffly serious impression of extract.

very light yellow- great nose of toast, apples, pears and lemons- the texture is terrific- winey with an incredibly fine mousse- again, lemons and pears. terrific stuff.

David Bowler Spring 2007 Portfolio Tasting (New York City) : Light lemon to water-white color. Intense nose of brioche, pears and yeast with notes of turned earth. On the palate it is mouth coating with good acid grip and fine bubbles. Notes of green apples on the long finish.
