Paulée Dinner at Marea : PnP. Lighter vintage with less concentration, but drinking perfectly. Put on some weight with air. Delicious.

Opened 2 hours in advance but should have put cork back on as aromas dissipated. Gained on complexity and finish though. Potpourri, library, leather, such elegance and persistent long finish. Excellent with pigeon with foie and choux en feuillete, sauce salmis.

Burgundy R&R (Ramonet & Rousseau) Dinner (Sepia - Chicago IL) : Alongside the '95 Chambertin-Clos de Bèze, both opened 90 minutes before serving. Mature black fruit, with both roasted and braised meat spice, very good depth and concentration. Completely composed and seamless. A small step better than tonight's bottle of Bèze.

Acker JK 51st birthday in NYC. Aromas of dried plums, red and black fruits, earth and sweet spices, kept smelling it for several minutes. The mouthfeel is uberdense while being weightless, the complex flavors mirroring the nose are wrapped up in layers of silk. Amazing wine, ready now, finishing in a long and chalky saturating finish. This is close to perfection, a stunning wine.

Maybe I’m being a little stingy here - I did like the last one more - but this suffers by comparison with the 96 Beze, which floats above the fray. The 95 Chambertin is an impressive wine, black cherry, roast pigeon, grilled nuts, more intense and evocative on the palate than nose. But this example on this occasion just didn’t move into the next gear.

Needed a good bit of air to fully open and also threw some sediment. Fully mature now with wonderful earth tones and sweet dark cherry fruit. Medium-bodied with an ethereal texture and very fine complexity on the finish with notes of farmer's earth, minerals the finest cherry spice. Lovely authentic Burgundy but not quite as spectacular as a bottle drunk last year.

2021 Athens Wine Event , An event to make up for the last 2 years (Spondi , Athens) : Served blind. A mesmerising wine from nose to tail ( We guessed La Tache 2001) , elegant and expressive. Red fruits, rose feel, bright yet elegant nose that was in full glory of burgundy. Similarly on the palate, elegant, silky. Considering the vintage this a monumental wine and one to remember . 96

Part of the triad (93,95 and 96) of 90's red burgs that have taken their sweet time to open up and melt the grippy, mineral tannic backbone of these soon to be spectacular chambertins. Stunning nose of ripe cherries, sweet barnyard and strong minerals. Fabulous on the palate with incredible flavors of earthy dark cherries and great mineral lift. Exciting acidity electrifies the wine which is texturally so round and silky and it all leads to a fantastic finish with great complex notes of wild cherry and crunchy ferrous minerals. La Paulée de New York Gala Dinner (Pier Sixty, Chelsea Piers - New York NY) : Small glass, brief note. Meaty black fruit with subtle spice. Tannins are perfectly integrated and softened, which is rare for 1995, so an elegant wine for the vintage. Good weight. At its peak potential now.

Perfect bottle, super fresh and youthful. Polished and clean but with great Gevry rusticity. Totally comparable to a couple of these from ‘96 recently. Dense red and blue berry fruit with flickers of soliy soulfulness and bits of spice throughout. This is a bullet with definite upside ahead. Brought this to an Acker auction to share with the table - this was humming right out of the gate. Lush and rich nose of red berries, some darker fruit and nice spice. On the palate its tangy acidity and great depth and complexity. This is well balanced and in a great spot to drink right now. Nose 95 and palate 93. Going with 94 here.
