3 hour decant. Loads of plum and cassis on the nose with a cedar backing. Plump red currant, cassis, and black plum palate followed by pipe tobacco and dusty gravel. Lots of bold, mature tannins linger long on the finish with dried cherry and oak, but not a lot of complexity. Drink with a long decant or hold. Nice steak pairing.

Very excited to taste Chateau Pavie Macquin for the 1st time and it didn’t disappoint. Even though the 2007 vintage may be the worst in the 00’s, this wine was beautiful. Still had notes of dark fruits that wasn’t overwhelmed by earthy and leathery notes. Soft tannins played along with complexity. Would recommend to consume within the next 2-3 years, if you still want som fruit and not maturity only.

Tennth bottle from a full case purchased at auction in 2016. Pristine condition. Decanted two hours in advance. Very similar to my previous note, except that this bottle came across as unusually tannic. Looking back at older notes, I think that it may have been caused by (very) mild acrolein taint (a recurring problem with this wine) that caused the texture of the wine to change without perceptibly impacting the aromatic profile.

Both the last and lost bottle; a pleasant surprise. Elegant and smooth, a refined Right Banker. Silk, fruit, and perfume in a balanced but modern style. Not too much of anything, and reminiscent of Canon (which is interesting for pricing arbitrage). Drinking well now.

Decanted and aired 30 minutes. Drank over a couple hours. No sediment. Eye: Dark red to medium ruby. Nose: Classic Bordeaux. Cassis, cherry, cigar box, red apple. A little vanilla and caramel. Palate: Soft velvet tannins. Precise well managed acidity. Cherry, cigar box, oak. Mineralité. Cacao. Touch of prune, and sweet rose water. Finish: Medium length. Lightly drying. A little chalky. Red fruitiness lingers. Overall: Classic, enjoyable, and a little boozy.

There is plenty of flavour and character in this wine but on this bottle it is fading with an exotic nose of plums, cherries, dark chocolate, truffle and charcoal. The palate is quite dense with plenty of fruit tending to the over ripe fig and ripe plum spectrum but still with a nice touch of minerality and persistence.

This is a big wine as usual but I like the way the '14 vintage has provided much needed restraint. There is plenty of rich blackberry fruit combined with refreshing acidity and wonderful notes of tobacco and truffles emerging after 2+ hours in a decanter. The finish is limestone taut with good grip and lovely notes of chalk and bitter chocolate. Love this vintage of PM but it really does need more time for the tannins to soften. 93+

This is great. On night 1 too tight, a lot of oak. Vacusealed and revisited 3 nights later with wild boar and it was in a perfect spot. "The purity and clarity to the nose of this wine are really exceptional with crushed berries, cherries and currants. Fruit and density are so impressive, yet this is so linear on the center palate, which gives it direction and focus. Fabulous."

Unsure what the flaw was here, but something was definitely off. Persistent powerful odor of burning rubber, but reduction seems unlikely given its age and the lack of such notes from other tasters. Round the edges one could detect a fine wine with delicate cherries, floral and earthy notes alongside a pleasantly round and velvety aged palate with acid and tannin in balance. A real shame since this was my only bottle.
