Decided to round off the last week of January with a beautiful creation of Romain Henin - brute nature raw champagne. Blend of 50/40/10% PM/PN/Chardonnay🍇 Intense fragrant fresh aromas of lime, ripe yellow flowers, honey, flint, yeast, lemon zest, hint of hazelnuts. Very nicely structured, expressive mouthfeel, precise high(-) well integrated acidity, lots of minerals & stones, refreshing mouthwatering though not really classic champagne, delivering piquant flavours of citrus fruits, flint, hint of light cheese.
