Asperg Wine Syndrome Tasting Group: 3 Guys - fall 2025 edition (Asperg) : Glass: Zalto Bordeaux Tasted fully blind. Clear, deep ruby color. Fine, airy, herbaceous Pinot nose. Beautiful texture, very precise, clear, ripe and rather warm fruit, medium+ tannin, medium+ acidity. 13% abv, fine oak. Some power, warmer vintage. Medium+ length. Beautiful wine. 91-92

pretty but rather subtle nose of fruit, flowers, forest, stewed meat, given its age, I was expecting it would be more open and lifted... primary on the palate, fantastic brightness pops on the mid-palate, deep well of ethereal savory notes fill out the finish... it appears this still needs time

PNP. Cork perfect. Color garnet. Nose shows dark cherry and maybe rhubarb? Definitely some sous bois and iron. Swishing shows both acid and tannin that are wrestling for dominance. At the end I think that the tannin wins. Sipping shows dense fruit that brings the structure in check. Very good wine and has years ahead.

This was drinking really beautiful now. Light, elegant and a lovely fruitiness still with some depth, complexity and wonderful balance from the secondary and tertiary notes as well. Cherry coke, raspberry, mashed strawberry, blackberry, rose petals, crushed stone, mushroom, slight oak touch, a bit of vanilla and some earthiness from forest floor and mushroom. Only a very bit of funk but almost unnoticeable compared to other bottles from Pataille and a bit of spiciness on the tongue.

Dark red/cola in color. Transparent, but dark and not quite as crystalline as some red burgundy can be. On the nose, this is quite ripe and open with liqueur like notes of summer berries, cherry, and red fruits. Almost candied, but in a good way. Quite floral as well (lilac) and then spice. On the palate, this has nice body and mid palate density. Texture is more fine linen than silk. Red fruited and very spicey with good mineral undertones …

Starts out very vegetal and leafy in an unpleasant way, a little funky - I believe Sylvain does 100% whole cluster on this cuvee. I ended up decanting this and luckily the funk blew off. Pretty sappy, stemmy, dark red Marsannay fruit with a slight crunch. The best part was the last 1/4 of the carafe. Went well with roast chicken.

Showing better than the bottle I had last year as the stems, etc. have integrated nicely. Flavor is dominated by a pure, somewhat dark cherry note and there is a also a little spice. Drinking well.

An elegant wine soft and approachable on the entry with breadth to the mid-palate supported with a surprisingly strident acidity and a plum skin texture. Much press and nice vineyard care. But this 2015, while pleasant at a restaurant, was both petillant ( not clean) and tasted too 2015 and hence less terroir specific. Large dark cherry helpings in a rustic stew with some black pepper notes. Very dark red and more corpulent than most Marsannay.

Becky Wasserman & Co: Icons & Rising Stars of Burgundy (E&R Wine Shop, Portland OR) : Some more odd funk here. Stony soil and grasslike notes. Smells a bit moldy and off putting. Better palate, on a round palate texture, offering ripe and rich fruits, some light bitterness, and a puckering sensation. Still feels fairly flat on the palate. Bitter mold shows up on the finish, and brings along with it its friend bitter funk.

Darker ruby color. First pretty open, notes of dark raspberries, red berries, also some plum, violets and some spices. Constantly changing in the glass... unfortunately not for the better. It‘s medium+ bodied, tastes like there were quite some stems too, has medium-high acidity and medium+ tannin that is good. The problem I am having is that there seems to be quite some volatile acidity that kind of kills the joy factor...especially in combination with the stems. I am still waiting …
