Seems to be developing and filling out a littl bit more after a few months. Very clean, tightly knit but starting to open up - green apple, lime, white flowers, ginger, grapefruit peel.

Similar to previous notes. Very young and and fresh with a little depth/funk methode Champagnoise closer to maybe a pet-nat than a champagne. Green apple, lime, apricot, grapefruit peel, ginger.

Pale straw, lots of bubbles. Really zesty with a sharp line of citrus down the middle and a small amount of a creamy/rich finish. Interested to see how it develops.
