La Valle del Sole Offida Pecorino

Pecorino is an obscure Italian grape varietal brought back from near extinction. Drinking Pecorino is not a hedonistic experience,as much as it is an intellectual one. I like wines with a sense of place, and wish I had some of the famous Pecorino cheese to munch on. Austere wine, with a slightly bitter aftertaste, it is much better on day three. Emidio Pepé makes the benchmark wine from this grape, but you may find his Pecorino a touch over extracted.
