Absolutely bonkers concentration of fruit, developed but not oxidative at all. Vinous as all hell with tremendous acidity to boot. This can be like a 97-98 in a couple more years.

Still young, but great intensity of fruit.

I found this champagne quite confusing to describe. Lite and elegant but the flavors are pretty big and don’t match what I expect from the nose or color. As with other CB champagne’s there is less mousse and less persistent mousse—all the bubbles fade to a nearly still wine in a short time. Nose is slightly nutty with a hint of brioche that makes you think this will be what you would expect on the palate. But more intense flavors …

Incredible stonefruit and some more pineapple lychee fruit going on too, but it's a Bouchard so the acidity and minerality keep it from being too opulent. Just astonishingly good.

Sunday hangout (and goodbyes) (Chicago, IL) : Disgorged April 2017, V. 10. This was surprisingly sweet for a 2010, despite the lack of dosage. There's a bit of a confected, white grape thing here that's not altogether bad, but feels a little out of place on a champagne with this sort of acidity. Not particularly weighty or heavy, but with adequate breadth on the palate. For the price that these command nowadays, I find them poor value.

Another tremendous bottle of the Cote de Bechalin. There is such a beautiful palate feel, nervy energy and freshness to the fruit. This had just a bit of nuttiness up front, but mostly the foamy red apple, peach and tart cherry juice drive this wine.

Ripe and fresh, orchard with very smooth texture. Not really yeasty or toasty, this is more like a fruit garden. One can also sense hidden black fruit underneath that support the body. Nice showing!

Same as my 3/23/2019 note. Simply great stuff.

Consistent with my previous note. But this time a bit less of the brioche and more fruit. Probably just reflects what we were eating it with. In any event, this is awesome stuff.

Saturday hangout (socially distanced) (Chicago, IL) : Disgorged April 2017, V. 10. I liked this a little more than the 2015 Ursules I had alongside. This bottle had more of a richness and breadth on the palate, with a mild nutty quality and some toasted bread. Good acidity but the fruit is starting to show some secondary leanings.

lways a treat to have his champagne. Great aromatic complexity, very fine. Coffee, French croissant, iron a touch steely and spice. Effortless on the palate w saline complexity. Nice length with depth and power.

Anders in Oslo; 3/4/2020-3/5/2020 (Oslo) : Disgorged in 2017. I love these Bouchards. Ripe and well-balanced. Red apples and currant. Biscuit and butter.

Very different than other vintages on this. Even more wine centric with kitsch and a slight metallic depth. Lovely and complex. A bit less acidic than usual. Rich and a weird complex fractal linearity. I realize these notes are a bit conflicted but this was a fantastic rendition of this wine that was wonderful with rich and spiced Moroccan food.

I am a big fan of Bouchard and love wines from the Aube, but this is my first of the Cote de Bechalin. Wow! We had this with fried chicken and it was singing. Great crisp notes of yeast and fruit with depth and clarity. Simply magnificent .

As before, I really find this wine to be a beguiling example of Pinot Noir Champagne. Focused and deliberate while also complex and just a tad funky (as is Cedric’s signature), with saline meets woodsy meets chalky meets limestone meets kirschwasser types of flavors all swirling around. A step up from the Val Vilaine, with the Bechalin honing-in on the mid-palate drop with an elevated weight and purpose. Finishes with a continuing array of stemmy black cherry and ocean rock …

Utterly magnificent. Deconstructing this down to this or that aroma or taste is a disservice. It is perfectly balanced, wonderfully refreshing, texturally alluring and simply fantastic. I am just astounded at Bouchard's wines.

Cederic Bouchard tasting with add-ons. (LystPå resturant Bodø) : Big nose. Significantly different from 2011. More and rounder fruit. Umami. Sweet spice. Red apple peel. Crisp and floral notes. With added air honey and candied fruit reveals itself. Fruity appearance.

Creamy and vinous. Lots of whole fruit flavors. Apples, butter, pears. This stuff is ripe for Autumn meals. I'd have liked something a little more acidic but I'm just being difficult.

Another beautiful bottle of Bechalin. Much of the same as 2008 which I have had many times over. Seductive parfume of apples, red berries and soft mandarin oranges. Palate mirrors nose but perhaps more towards red apples and sweet gooseberries. Great depth. So seamless and harmonious. 93p

A prime example of a Blanc de Noir from Cédric Bouchard that has a slightly pink appearance due to 100 percent Pinot Noir. Red fresh apples and raspberry on the nose at first. Nice open and opulent but with elegant perfume which turn some sweet vanilla, dried figs and dates after a while. Lovely fresh palate of fresh apples, gooseberry, hints of melon and liquorice in the finish.

A very intriguing effort, with invigorating notes of chalk and mineral inflected yellow citrus, raspberry water, and melon (grapefruit, honeydew rind), bruised lemon peel, sea foam/saline, and pulverized travertine. Spritely and a little crunchy, this Champagne carries both the Pinot Meunier varietal and Bouchard’s exacting style in a fascinating package that is both cerebral and briskly flavorful. Not as earthy or twiggy as some BdN Champagnes can be (which I appreciated), but enough funky fresh keep it in the unique …

Quick note over dinner. Very intensely flavored, with a classic Blanc de Noir profile. There's an overriding white raspberry flavor, with slightly salty meyer lemon, a touch of grapefruit and a bit of apple. This was all complimented by chalkiness, mineral notes and a good dose of salinity. This was exceptionally long on the finish, lingering for over a minute.
