Sparkling blinds (with Non-alcoholic sparkling) (Peter's) : (blind) Light brioche on the nose. very light. slightly reductive? underripe. Seems classic extra brut. 5g dosage (re-confirm in a bit since it's my first sip today) - actually 7.5g. high acid. medium-minus autolysis - not a ton of time on the lees. Clean, reductive style. Medium alcohol - 12.5% Quite nice.

At Le 21ème Commis, Morlaix, France: A few nights earlier, we had a Champagne from the same area (Côtes des Bar) at the same price -- the Piollot Cuvée de Réserve Brut -- that we liked much better than this one. The Devaux wine has very aggressive and persistent bubbles -- the fizziness was a distraction -- and the flavors are not as pristine as in the Piollot wine.

Nose is clean, medium intensity, with aromas of oak toast, brioche, ripe fruit. Developed. On the palate, dry, high acidity, medium- alcohol (12%), medium body. Medium+ flavour intensity, with flavours of sweet citrus lemon curd, sweet ripe apples, toast oak and brioche. Medium+ finish. Good quality. Sweetish aperitif drinking Champ. 100% Pinot Noir. Tasted this at New Ubin Seafood (Stevens) over lunch with my best friend and a special guest. The Champagne was on the house. We ordered a Smoked Burger, Mee Kia Char Siew, Babi Pongteh, USDA Galbi Beef Short Ribs, and the Boss Fried Rice (White version). Fresh toasty notes with zest. Crisp, clean with a refreshing finish. A notch or two above the commercially available big house brand champagnes.

Tasted against the Devaux NV BdB and the Cuvee D. Cuvee D the more 'complete' wine but I really enjoyed the clean fresh fruit of the BdN. Ripe red delicious apple with some baked biscuit. A fruit sweet profile but I don't believe the sweetness was due to high dosage.

Medium lemon in the glass. Quite a generous nose showing yellow fruit, peach, apricot, cantaloupe and a strong dose of yeast, biscuit and whipped cream. Palate is broad, but backed up by a zippy acidity making the wine structurally complete. There could be a bit more depth, but at the price I ain't complaining. Good stuff.

Drank at 28 Church Row. The wine list talked this up as an interesting grower champagne but I thought it was just passable. Some hints of musk and age with lemon and a shortish finish. Pleasant enough as an aperitif but not impressive.
