A Burgundy Paulée with the Chevaliers du Tastevin (Hooked Market & Kitchen, Latham, NY) : Sweet and sour red fruit nose. Long and very tasty!

The last of these and the wine aged very nicely. The aromatics where the strong component with some dark fruit mostly black with a good earthy component -very rich sweet & seductive nose. Medium body with pleasant personality yet there is a big concentration of dark tannins that give the wine a dry and astringent finish. Once we had some sausage as well as meat at the table it helped a lot in negating this slightly harsh aspect. Overall a …
