Kikuizumi Hitosuji Junmai Sparkling

Very slight yellow hue, slightly darker than the Nanbu Bijin. Mango, underripe yellow peach, Peach Kefir fermented milk, touch sweet orange, citrus, apple spice, apple skin. Nice sour acidity, some umami, tangy and lots of character vs. the clean and poised, dry Nanbu Bijin. Still excellent bubbles after 3 days, but the Nanbu Bijin has much finer bubbles, not sure why. This is like a natural peach or apricot pie, the NB like a pear or apple tart. Interesting comparison. …

Although this seemed quite sophisticated, and had a lovely color, I'm not a fan of sparkling sake. but...some rose bud, fine bubbles, slight berry and leafy note. Finish is always weird to me. Mutual Trading sake tasting. 60% Gohyakumangoku
