Slow oxed for 5 hours before serving which is appropriate. Honeysuckle, white flowers, flint, honey and stone fruit. Very good power and length backed up vibrant acidity. Loved the concentration of this Roulot which speaks about the terroir and vintage. It evolved throughout the night.

La Paulée de NY Gala Dinner (Pier 60 - NYC) : Jero. Similar to an 07 tasted a few minutes prior but with more nuance and layer, but still has the power and freshness. Amazing in this format.

La Paulée de New York Gala Dinner (Pier Sixty, Chelsea Piers - New York NY) : Small glass, brief note. 3L from the domaine. Fresh and cooked apple with delicate floral and spice notes. Seems subdued to start, but this goes on and on and on. Great length and the textures behind it.

My bottle. This took forever (like 3 hours) to open up and the whole time I was freaking out that the bottle was bad but kept telling myself that Roulot needs time. The 1999 Roulot Tillets is in a very attractive place, offering up an expressive and complex bouquet of grilled peach, apricot pit and popcorn. On the palate the wine is broad and layered, but still holding together with a firm core of acidity and energy. A lovely Tillets.

From magnum from domaine. Light pineapple and dry rocks on the nose with initial whiffs of light petrol. The palate starts thin and required 45 minutes in the glass to open up, but when it did, this wine provided a long finish ending with pleasing vanilla notes.

Roulot Meursault/Roumier Bonnes Mares Lunch at La Paulée (Daniel, New York) : Magnum. Remarkably light yellow for its age. Little in the way of aromatics. Elegant middle weight, almost delicate for this cru. Subdued bitter citrus, real sense of stoniness, and rising almond/hazelnut. This unfolds and improves in the glass but is still well short of being an outstanding Perrières.

Dinner with friends. Color deep yellow but appeared to develop free tinges with breathing. Wonderful nose that jumped out of the glass : white and yellow peach, pears, apples and limes. Minerals and honey with touches of almonds. Palate beautiful balance of fruit and savoury characters with real drive and a long silky palate with touches of limestone and sherbet lemons. Grand Cru quality wine in perfect shape for age. This is why we age great White Burgundy !

La Paulee "Warm-up" Dinner (Spruce and RN74 - San Francisco CA) : From 3L. Peach, exotic spice and poached apple on nose and palate. Great power and concentration from start-to-finish.

Wow what a white wine, still amazing fresh and light on its feet after almost 13 years. With understated citrus fruit and toasty nose. Medium palate but with layers and layers of substance coming at you after you swallowed it. Palate with butter brioche and very long minerals aftertaste, took 2 hours to open up and when it is ready, the wine creeps on you. Still amazingly young and perhaps 3-5 years from its peak.

I really enjoyed this wine for lunch. Medium yellow color with beautiful aromas of citrus and flowers. Very good acidity, but still an elegant softness.

An evening with friends (Chez Nous and Chez Panisse Cafe) : Sourced directly from the producer. Pale yellow with minimal signs of maturity. Very strong mineral, citrus pith nose. Fantastically intense, rich, coruscating palate of the site's namesake pebbles, grilled nuts, lemon cream, and ripe, heady fruit. Very young and fresh. Very, very big and strong without going over the top. I could still taste this wine the next day. The best '99 Beaune blanc 1er I've ever tried.

Tasted blind. Enormous minerality on the nose, it's just so stony! Slender taste, a bit austere, very stony mouthfeel, great acid structure, freshness and length. Still so young! Slightly controversial around because of its spiky acidity - but if you're into stony wines, it doesn't get much better than this. Love it! Either it's a Corton-Charlemagne, or a Meursault Perrières (= stone).

Every time I let a sommelier talk me into ordering a Meursault, I regret it later. When will I learn? This was one of the best I've ever had, but still pathetically terrible for the price I paid. Wimpy and watery immediately upon opening, offering only minerality that was pleasant, but far too weak. It took a full hour after decanting to reach its peak, at which point a little bit of fruit had appeared. Still very disappointing.

Recommended by the sommelier at Craft, NYC. This wine was a stunner. Crisp and clean with tremendous complexity. Taste of crushed rock, apple, pear and lemon. The finish went on and on. Wow! I tasted a Marcassin chard next to this and this flat out killed it.

Really lovely Meursault palate weight and a bit of honeyed richness, balanced with good acidity, which gives the wine a real sense of freshness. Easily 1er cru (maybe even upper 1er cru) quality and drinking extremely well right now. Wish I had some more.

$39.95 full retail. Drunk side by side with the '99 Roulot Meursault Vireuils (see TN), I preferred Tillets, as it is more fresh and lively. This wine has a lot going on. Clean, with good acid / balance; bright color (the Vireuils had a more advanced color). Very nice Meursault. As is often the case with Roulot's lieux-dits, this could easily pass for 1er Cru juice.
