From the wine list at Dilla (Rome). Interesting to find a white with 10 years of bottle age on the wine list of a small Roman trattoria - we were very pleased with this choice. This had that distinct minerality that I always get with Greco but also some peach pit and stone fruit, salinity and acidity. Perfect pairing for a late lunch of caprese salad and Cacio e Pepe.
2007 vintage
