The wine was medium garnet in colour. It had a very earthy nose and showed red fruit, red cherries in brandy and red cherries in cognac, spices, liquorice, soy sauce and umami notes on the spicy palate, with chili spice and balsamic acidity. The tannin was still present. Good concentration and length. The wine paired very well with Sushi, believe it or not. If you intend to open a bottle now, I would recommend decanting for an hour the evening …

Very oaked on the nose, although as far as I know it only has 40% new oak. But underneath there is some very delicious fruit. Very classic pinot noir nose with spices (ala Vosne), some leather and minerality. A great combination of dark and light flavour sensations. Perfect tannins, a really impressive wine.
