Still drinking well after 9 years. No discernible hop character anymore. Now there are notes of dried apricot and herbs.

Opened to celebrate my first wedding anniversary! Iris is a beer that's held a special place in mine and my wife's hearts, and so we're both very familiar with it and also thrilled whenever we get to open a bottle. The dry-hop presence is still there, melding perfectly with the earthy funk that only Brussels can provide. I'd love to be able to open a bottle of this on every anniversary for years to come!

A gathering of wine geeks (The Greater Boston Area) : This was more golden in hue than I remember in past bottles that I've had. The nose is full of musk, earth, and a hint of tart yellow apples. On the palate notes of tart-white grapefruit, green banana, lemon, chalk, and aspirin were most notable to me. I love this beer...but it is not for everyone. Opened with friends to celebrate my buddy's move to Phoenix! I've always loved how the classic Cantillon sour flavor shines through, with the earthiness of the added dry hops pulling out a bit more of the natural funk while still maintaining their own flavor integrity. Such a delicate, layered, complex, and masterful beer.
