Same as prior notes. Opened 4 hour of slow ox. Top of Spring Mountain making true Bordeaux like wine. Perfect!

light tannins, spicy on the open. very dark purple. very nice glass of wine. much life left, in a half bottle? maybe two to three years. certainly a maritage. The wine looks ruby colored. The legs are medium. There is no sediment in the bottle. It smells like prune. It tastes like stoniness. The body is medium/full. The wine has bright texture. The wine finishes medium. The wine has low acidity.

So to answer the previous hypothesis. Yes there's bottle variation. My bottle all came from the same 6pack box. This bottle I'm enjoying currently has better fruit than the last bottle. Better overall period. Nose was heavy on the brett upon opening and last for about 20 to 30 min. Then it blows off for the most part an you get those tertiary notes that just sing to me. The flavors are fruit dominant but no where near over done. …

I'm not going to rate this bottle. Instead I'm going to open another in the next few days. An see if I get the same performance. This seemed like it had aged longer than 10 years. Still enjoyable but very earthy i felt for what this is. I like earthy but I felt it lacked a lil on the fruit. Will let you know in a few days if it was bottle variation or if it's time to drink up. …

Excellent bottle of cab based blend. Very different from the other bottle I had recently. This was taut, good acid, depth of dark fruit flavors with some subtle classy green earth notes along with the cocoa and pencil lead. Tons of life left in this bottle

As if we need another example, here comes a wine you must have patience with. Decant and let it open. As you open there is some funk and a strong yeast presence. Nose also very Earthy, black pepper, anise, tobacco, the yeast continues. Same notes on the palate with Black cherry, smoke and even black licorice. Very good, but didn't fully bloom. (hint for my next bottle here)

Purchased from wholesaler who had just got it from winery as a library release. Time has been so good to this wine. Took to a blind tasting with the likes of Harlan, Tignanello, Del Dotto Family Reserve, Peter Michael, and Valdicava. This, and the Harlan were the stars of the night with some preferring this over the 2007 Harlan because the Harlan was still so big and primary. Opened 3.5 hours before tasting and it needed every second. Went back …

Nose is attractive upon opening. Red fruit with some earthy backing . Doesn’t smell California like nor Bordeaux like. Obviously this is a Bordeaux blend in California soil. All five grapes used in the blend. I do get a wife of alcohol when I enter the glass. Legs are stuck to the side of the glass , they are dense and concentrated. Taste- red fruit protrudes amongst anything else. There’s a lil bit of tart . Tannins are resolved and …

Magnum. Lush notes of red berries, blue berries and licorice. Still with good acid, freshness and balance. Undertones of earth and well-integrated tannins. Excellent wine in a great place right now.

Decant 2+ hours. Well structured with properly polished tannins. Wine is in a great stop right now. Would recommend opening the next time you’re having something packed full of earthy undertones such as a Beef bourguignon. There’s enough acidity in this bottle to balance it against the meal.

93+ beautiful nose of big black cherry, leather and some smoke. The palate is equally as complex with a great backbone of tannin and acidity. I think I would have a hard time guessing this is from Cali in a blind. Would perhaps guess a high quality cab/super Tuscan from Italy. Really enjoyed this.

A 65th Birthday Celebration (Schur House - Riverwoods IL) : Small glass from magnum. Very lush aromatic start with ripe black fruits and liqueur. Less distinguished or distinguishing on palate, but still tasty while clearly ripe.

Surprisingly good. PNP. Some sediment, took its time to open up. Drank next to a ‘10 Bryant and half the table preferred the Cain, me too. It drank more smoothly and had a more intriguing flavor profile.

Right out if 58 degree cellar was good. Cork fired and part ended up in wine. Inhale from glass is a bold smooth balanced aroma telling you to breath in again as there is more there. Taste is moderate body , no biting, average fruit but again this haunting of “taste me” draws me in to sip more and more. Paired well with Italian sausage with barratta, olive oil & vinegarett. Not had a bad Cain Five ever

Cain Vineyard and Winery Winemaker Lunch (City Club FW) : I have had this wine multiple times before, and when pulled from my cellar, it was a great pop and pour. First time I had it was in 2019, I think. At this lunch, Chris said it had been double decanted for some reason, even though it is the most delicate of the flight. Either way, the nose was the pure red fruit that I remembered, even if the palate …

Everyone once in a while you find that bottle that you probably should have drank years ago…this is that bottle. Here’s the thing, it’s held up very nicely. Dark garnet, and still clean, red raspberry and some pomegranate and wet gravel and some barn funk on nose. Didn’t have it with food which might have helped it along. The tannins have held tight surprisingly. It’s leathery off the rip, but has some forrest floor and blue and black fruit. The …

Still drinking impressively, even though in theory one might suspect getting more toward the latter end of its prime, so don't necessarily think this vintage has to be consumed soon. Another lovely balance of character and subtlety by Cain; if you're looking for a fruit bomb, not your cup of tea, but if you value complexity and nuance, a can't miss choice.

Reading the tasting notes I see this wine little differently than most. I picked the wine to drink with a rib roast based on the notes that were suggesting it is ready. It is drinkable and enjoyable but nowhere near prime time. I suggest another five years minimum and it will go much longer. Drank 2/3 of the bottle on the first night and two days later went back to it after keeping it in the fridge. The tannins were …

Old Napa Wines Dinner (Joseph's Place, Wong Chung Hang, Hong Kong) : Popped and poured after a long line of old Napa wine we had drank blind. Deep red/purple colour....totally opaque. Nose is surprisingly muted...black/red fruit. Palate is sour, tannic and hard to tell if it is too young or past its best years. Good length...the finish was the best part...which maybe suggests it will improve with more age, but I'm not convinced. My first experience of this wine so …

Chris Howell in his Cain Five vineyard in Spring Mountain is a one-of-a-kind winemaker who has been doing it his way for 30 years. This is not a Napa Valley Cabernet, & you will be disappointed if that's what you expect to find. I would describe this wine as the marriage of some French wine making influences, a low technology / intervention philosophy, and New World mountain soil (Cain Five is at 1,200 ft). Its got elements of winemaking from …

The nose is beautifully balanced with liqueur tones, dark red cherries, licorice, spice notes, herbs, cranberries, raspberries, currants, vanilla beans, and a touch of chocolate. The Full bodied feel is silky, but with some brawn along with medium acidity and silky medium+ tannins that are showing excellent resolution. This is right in its pomp and is drinking perfectly.

Mini Cain Five Virtual Vertical : Medium Ruby, showing some age with a medium rim. Moderate nose, not overly fruity. Spring flowers, Downy sheets, dry earth and maybe a hint of smoke and tobacco. Soft tannins with bright acidity, a little heat on the Short finish. Lacked intensity. It did add a little more complexity as it sat in the glass. Others like this wine the most. I thought the other 2 had better balance and much more complexity.
