100% Pecorino from the Terre di Chieti IGT. Cold maceration. De-stemmed and soft crushed. Fermented in stainless steel tanks at 8-11*C. Aged 3 months in stainless steel. 13% Abv. Proprietors: The Ulisse family. Now run by brothers Antonio and Luigi Ulisse A(ccuray)=2: Pale lime/yellow. Fresh, fruity varietal. B(alance)=2: Compact fruit with adequate structure.
