Beautifully copper in the glass, with great luminosity. 100% pinot noir providing prominent raspberry and sweet strawberry notes, ripe fruit. Hints of red roses. On the secondary, whipping cream and croissant, with some hints of something darker, mushroom and underwood. In the palate, the mousse is delightful, creamy, providing energy and muscle to the sip. The Chardonnay of this cuvée comes from chalk soils (80%) with a clay layer, the Pinot Noir from loamier soils with chalk and limestone underlay. The yield was 60 hl/ha. The vines are around 40 years old and were ECOCERT certified in 2012. 100% of the Cœur de Cuvée was used for the base wine.
