2008 Can Sala Cava was a gastronomic sparkler. The developing vintage Cava was clear and medium lemon in colour with persistent, delicate effervescence. Complex nose of bruised red apple, lemon rind, peach and white blossom jumped out of the glass, followed by sourdough brioche, cheese and a touch of walnut. The mouthfeel was dry and medium-bodied.
