Made from table rice, only 90% seimaibuai; Kimoto method, slow-brewed, nama, genshu, natural yeast--true ancient style nihonshu. "Lots of lactic acid, strong savory notes, good acid, long finish". Truly amazing sake and incredible with the eel unagi savory dish. At Shibumi w/J&A&B
