Possibly right after the peak. The fruit was very dim but still present and nice complexity of tertiary aromas. Drank it over 3 days and it kept at the same level

Aristos is a project that started in 2003 with Chilean terroir expert Pedro Parra, Burgundy’s Liger-Belair and French-Chilean winemaker Francois Massoc. Most of it is Cabernet Sauvignon from Cachapoal with some Malbec from Bio-Bio and a bit of Carmenere from Maule. It spent 24 months in French oak (33% new, 33% 2nd use, & 33% 3rd use). Only 333 cases are made, so it’s as rare as Liger-Belair’s La Romanée but costs about 100 times less. Still rather youthful appearance …
