Opened 3 hours before tasting but did not decant. This has gotten better and better with age. A medium body cab with dark fruit, a little earth and well integrated tannins that provide a very smooth drinking experience. A long rich finish. Lots left in the tank.

Beautiful wine. Delicate, floral, perfumed. Tannins very soft. Just a pretty wine. Drink now.

Beautiful. I'd say it's at peak and has no more growth, but if you need a smooth supple delicious wine, open it now.

Enjoying this wonderful wine at my place in Vail. I had the pleasure of knowing Don Ross and I consider him my friend. I wish Don could have had the opportunity of drinking his 2007 in 2019. Joann, if you still have some, I hope it brings you the same satisfaction! Dave OToole

This is drinking very well now. Didn't take notes, but it was a very nice bottle.

My wife and I tried this tonight with a new macaroni and cheese (with bacon) recipe. Very tasty and smooth. I've had Shibumi Knoll Chardonnay before (which is outstanding), so we wanted to try their Cab. I am impressed. I got the chance to meet Don a little over a year ago when I picked up some wine. He was a very nice man and I'm very sorry that he passed away a few months ago. I wish his wife …

Disjointed and sharp edges. May improve with time, but not great for me.

We celebrated Don Ross's life last night with this bottle of wine and his highly acclaimed Cardonnay. Great wines and great man. Thanks Don!!

Cherry color. Lovely nose shows strawberry, plum, and green fig. Lighter cab style (we prefer their Pinot) with light berry fruit but lingers less than we'd like.

Nice enough flavor, but a little thin

Big big hit of the cabs for our party of 10 at the restaurant. Very smooth, great flavors.

This was pretty good. 90-91 pts but that is about where a $90 bottle of wine should be. I got a hint of galvanized metal on the nose intermixed with cinnamon almost like red hots. Tannins were soft and approachable and the finish was decent. Probably 10-12 seconds. I found more red fruit with cherry, strawberry initially which gave way to black cherry and some licorice notes as well. Decent, well rounded and very nice.

Don Ross (owner of Shibumi Knoll) says his wines need some time to show their real quality, and I'm now a believer. I waited over 3 years to drink my last bottle of the '06, and the change was amazing. Layers of fruit and spice (clove, allspice, and more), a smooth mouthfeel, and lingering finish. Wow. They are selling some of their library wines this year, and I may go back for more. This is definitely the good stuff.

Red fruit and spice on the nose, full and complex on the pallet and nice long finish

Beautiful fragrant nose redolent of leather and plum. Exceptionally well-balanced. Earthy rather than fruity/jammy (a good thing, in our book), and medium-bodied. Drinkable now; however seems like the tannins will set nicely with more aging.

Popped cork and drank. Nicely balanced wine with a nice balance of fruit and oak. Not like some of the over oaked fruit bombs that are coming out of Napa these days. Bottom line is I would buy more of this wine, if I could find it. Very nice stuff.

Pretty good. Nice structure and flavors, good nose and color, but not exceptional for a vintage with a lot of exceptional wines in that price range.

Nice nose and pleasant flavors. A bit restrained and not as fruit forward as many of the other '07 Napa cabs. I liked it. Better than most recent Shibumi Knoll cab vintages; not sure if it is really worth the $100 tab, but I still have a fondness for this producer This was the last of my half-bottles, I have been holding the 750ml bottles for a while, but they should be ready to start drinking soon.

pretty good. Drank a half bottle so it may not have shown well. Probably needs a little time. 89+ is a "provisional" score

Between an 07 boswell estate and an 07 Karl lawerence. This was nice but out classed.

Pretty good. An extra 5 months since my first bottle hasn't changed anything. A decent Napa cab, but not really special -- not sure it matches up with other $100 wines. Somewhat harsh tannins at first, but opened up a bit with air. Two bottles left so I will try decanting next time.

Wow.......... Decanted for 4 hours. It had dijon mustard and berries on the nose with a palate of dried fruit, hoisin, and dust on the palate. nice long finish.

Red berries and currant with a lingering finish. Not as plush as I expected and not really up to previous vintages of Shibumi Knoll.
