Chamlıja Cabernet Sauvignon

Dense dark purple core with some age on the rim. Intense nose of ripe dark fruit, plum, cassis, fine tobacco, discreet oak and black truffle. Very savoury on the palate with layers of ripe dark fruit, rounded tannin, starting to mature and display a certain complexity, with a dense and long finish. Technically, it is incredible wine. Very astonishing to see all these technical numbers belong to the same wine. It has a color index of 28 (usually Cabernets around 10-15)! It is the darkest wine Chamlija has ever produced. It has a very low Ph: 3.45 (at this level of ripeness normals around 3.85) . Acidity is around 6.7 grams tartaric. Vertical of 2011 to 2013 Cabernet Sauvignons from Chamlıja. Not open top fermented this time. Extended use of oak for 20+ months. Deep, inky purple. Explosive nose with cedar and vanilla aromas out front followed by blackberry and hefty plum. Quite a sumptuous wine for now; bold and extracted with so much substance almost making it aggressive for the moment. So sweet and extracted.
