Opened this bottle on the 20th of November 2025. It rested in my cellar at 56 degrees until tonight. I poured out a good 3oz into my Sensory, hand-blown crystal. Holy! It was fresh and good, STILL! Are you kidding me? It had plums, dusty oak tannins, prunes, leather and tobacco. Two and a half months of slow-ox! Still good! Wow! Palate was still energetic, holding sweet tannins of fruit and oak, with plums, prunes, tobacco, length. Are you kidding …

Slow-oxed this beast for 13 days; seriously, 13 days at 60 degrees. It had sat there in my cellar, ignored, as I don't like this style of wine at all anymore. I did, when I had purchased this at auction about 11 years ago, but now I prefer those natural non-oaked juices from obscure locations of the biodynamic styles. I decanted a full 6oz, leaving at least another 10 in the bottle. At first it was very mousey, the nose …

This was a beast. Massive monster of a wine. I could illustrate what this represented to my imagination. Despite its huge nature it was well balanced, but needed a few hours of air. I could only decant half the bottle before the black ink of sediment showed. I'll let that remnant slow-ox for a few days at 63 degrees. I guess I was in that mood for a massive beast of a wine, because I really enjoyed it. That palate …

Pop and poured into a decanter and immediately enjoyed with food (Flannery hangar steak fajitas with sides, in case you were wondering). Dark purple color. Nose offers dark cherry with a savory spice and herb note. Wonderful deep dark fruit with good acidity. No funk. Just good fruit, spice and an herbal element (suggesting whole cluster). A syrah that is energetic and with good depth of flavor. Delicious. Syrah. Quality cork branded; no vintage or vineyard.

It was much better a couple years ago. Starting to fade. Reidel Syrah glasses. Adding two days later: I rated 92 and now going with 93. Two days in refrigerated bottle with air taken out and it was better, which makes me think I didn’t air long enough before. Maybe do a couple hours or aerate

One of the best Syrahs I've had from Paso...this wine has great intensity and balance and has really improved over the past 5 years. A nose filled with dark fruits, olive tapenade and blood leads to a complex mid palate and a finish that lasts a good minute. If you have one break it open as you'll be in for a real treat! Unfortunately this was my last bottle...

Dark purple, grilled beef, herbs, and blackberry on the nose. Sweet black cherry, black raspberry, tart, subtle vanilla and a crisp clean long finish

One of the best I've had from torrin. Although the first glass was dull and muted it really emerged after 3 hours. So much density and complexity while starting light and lively acidity was ever present. 3rd night was the best. Decant this if you still have some. I was worried it would be all bruised and overripe fruit. Happily proven wrong.

Pretty damn good after 10 years. 100% Sryah...Blackberry, blueberry, and dark cherry. Floral notes along with white pepper, licorice, spice, olive tapenade, and savory herbs on the mid-palate. Very well rounded right now and drinks like a Northern Rhone. Smooth tannins, long finish...great now, but will easily go another few years.

Consumed at dinner party, note from memory. Nose: Medium intensity showing dark fruit and Asian spice notes. Palate: Full bodied, dark fruit attack with spice and earthy notes appearing through the mid-palate and back-end culminating in a 30-45 second finish.

I had no idea that California Syrah could taste this good. Incredible nose of red fruits and flowers and deep dark purple in color that tastes of dark red and black fruits with a nice hint of a spice note. Great mouthfeel and aftertaste to complete the package. Bravo Torrin!

Drinking well now. Dark fruit and savory notes to the nose some licorice, body is well integrated with round dark fruits balanced with rounded tannins and some bright acidity. No hint of oak per last note which has resolved to spice. Great finish. Drinking window should hold for the next 5 years.

Note is from reserved half bottle on night 2. Dark and opaque with some sugar showing on the side of the glass. Nose is concentrated with spicy smoked game and berry liquor. Palate is rich and full, generously alcoholic giving sweet dark fruit.

Drank a Coravin pour on two different nights. This has shed much of its baby fat. In addition to dark fruit there is some black olive, smoked meat, and black pepper. On my next visit I will give it longer to open up and will plan to decant the bottle.
