Last Maggie…not as enamored as last bottle, but still dazzling non the less! Little more prickle and not as integrated…but props to the energy…LOVE those exotics and salt licks…vinous richness…not as “DP” as before. Still happy juice!

The wine is GORGEOUS! Totally integrated and calmed…yet still sharp and prickly with action…just love the floral exotics…the fresh citrus dusted with sea salt…smoky lees and vanilla caramel creme mousse…reminds me of DomP SO much here…and a great vintage like 96…this wine is blowing away most recent memories of UM wines…it’s THAT good out of Mag!

Opened this bottle and let the volcano of bubbles rush out of the bottle until it slowed enough and was no longer pouring over the edge. The bottle was opened at approximately 43 degrees and once ithe bubbles settled down a bit, the opened bottle was placed in a ULine U-Chill where the temp was maintained around 45 degrees throughout the tasting. 1st glass was poured after approx 45 minutes of air from being open in the bottle. My last of these. I experienced a bit of bottle variation with mine, some showing extremely fresh and others not so much. I’m a fan of Michael Cruse and enjoy his Ultramarine sparklers, and while it’s hard to compare UM to this, there are similarities and these are really delicious, especially for the money. 2017 base (released spring 2020), zero dosage. One can't drink Ultramarine everyday...but I would if I could! This is my first try at a Cruse Wine Co. wine...and it's just as I suspected...great! Sans soufre/dosage...needs some air to calm down as it is a pop rocks acid bomb right out the gate! Crisp green apple, pears, honeyed apricot, ripe peach, toasted brioche. Very refreshing. Fantastic with chicken confit.

I have not had California sparkling in a while, but color me impressed by the NV Cruse Tradition. This has everything you would expect in a Grand Cru Champagne, but everything is a little more sunnier and Californian. The nose is class with honey, nuts, pears, and wet rocks wafting out of the glass. The palate is intense, combining honey, citrus, and a pervasive chalkiness that gives a fantastic mouthfeel. fine work with this bottling. steely upon opening. would give it air if opening today

This is the new release based on 2017. Unfortunately it's rather wound up and shows lean and simply at present. I don't recommend opening this right now. Regardless, it evolved positively over several days. There's a unique wooly note to this wine that reminds me of singed wool/lanolin. I'm not crazy about it, but it is distinctive.
