Could be bottle variation but massive development since past 1-2 years. This is now a golden mature color with nutty hints to complete the palate. Simply gorgeous, perfect window.

Vinnut nailed this. Got a whiff of red apples on opening and before pouring but that passed immediately. Then honeycomb, beeswax, almond croissant, pears, oyster shells. Darker than 2023 when I last had this bottle and clearly more mature. Good substance on the palate. A bit nuttier, especially in the finish. Peak now and over next 2-3 years.

Golden yellow delight. Keep evolving in the glass. Marzipan w. hint of dark chocolate. Tiny bit of port, raisins, citrus and chalk Red berry jam? Bloody perfect!

Light golden in color with a fine delicate & constant perlage. Full, fragrant & attractive nose of mature, ripe fruit aromas of green apples, lemons/limes & pears with overtones of floral & yeasty/brioche notes, toasted hazelnuts, honeycomb, minerals & stony notes. Light bodied with a very good concentration of well balanced & smooth textured, zesty, ripe fruit flavors of green apples, Meyer lemons & pears with yeasty/bread, almonds & minerals. Long lingering crisp finish. Drinks quite well at present but …

BYO Bodø; 10/3/2025-10/4/2025 (Bodø) : Relatively rounded nose with spice, apple fruit, floral notes and a light buttery touch. The palate shows a broad mousse with fine bubbles, delivering grapefruit, lemon, green apple and chalky minerality. Dry and precise, with nutty hints emerging as it opens in the glass.

Bones 1989 Retirement Celebration: A Night of Legendary Bordeaux and Friends (Atlanta, GA) : Monthly wine group dinner at Bones in Atlanta celebrating a regular's retirement. With 14 people and lots of socializing, I only managed brief notes on many wines. Heavy body. Paired with bread and onion rings. Brad - heavypourwine.com

This is drinking quite well currently; very tasty; mature feel, but still plenty of freshness and fruit. Wish I had a few more magnums.

Wow. One of the best bottles of champagne I have yet tasted. Fully mature and concentrated, with honey, brioche, apple and Hazelnut (classic BdB) flavours wafting out of the glass. Rich and integrated, with lower acidity due to the bottle age. Beautiful and just my kind of champagne! Absolutely peaking right now. Not for those who prefer the lighter, younger and more acidic first types.

Sour green apple, touch of baked bread, juicy and slightly oxidized. Tasted a bit like sparkling grape juice but I still enjoyed it.

Wow, I could drink this all day. Light color. Nose is brioche, chalk, honeycomb, crisp pears. Good acidity and saline on the finish. That could describe any decent champagne; this one has restrained elegance. Some nice toasty complexity starting to develop but will likely never overwhelm. With breathing, smoky hazelnuts slowly coming out and eventually take over— a clear BdB sign. While I’d be reluctant to turn down a glass of Krug or Bollinger, I’ve noticed that my taste is …

Great Champs for heavier, flavorful apps. Good acidity and more palate weight than many top Chaps like Taitt CC or Cristal. Nice brioche, stony lemon rind, pear, full finish. Glad to have more bottles and mags. Will live another 10 yrs, esp the mags.

This continues to drink well in 750 format; seems mature though no signs of fading; an added layer of richness and honey with lemon, pear, wet stone. Good intensity to the flavor and lovely depth.

Applesauce on the nose. On the palate, it tastes like lightly oxidized/bruised apple, faint nuttiness as well; finishes with a bit of a woody yellow raisin-like sour.

Opened to try another bottle since I just bought more; good stuff and good value; has some richness and brioche initially, gets fresher throughout the evening and has very good depth. Drinks well now, but seems like it should age well for quite a while yet.

This is a delicious 15 year old Champagne. Dark yellow is color with a golden hue. Medium plus in body with medium plus acidity and medium sized bubbles. Showing citrus, green apples, herbs, brioche, yeast, spices, herbs and black pepper. Elegant, spicy and entertaining. Nicely balanced with nice complexity. Good right out of the bottle, and better after 45 minutes. Drinking very nicely now, but still young. Will continue to age nicely in the next 5 to 10 years. A …

Initial hints of crabapple blow off, with notes of cherry, Fuji apple, brioche, and almond commingling throughout. Creamy, and with lively acidity, this is both complex and crowd-pleasing.

This is the Rare Wine Co cuvee from this coop; this was young, but absolutely delicious. Classic Mesnil with loads of minerality and saline hints, lemon, green apple, and floral notes. The palate was brisk and tension filled, but still open enough to be super tasty. The finish tightened up a touch with some austerity from the acidity, but all in all this was very good and should age very gracefully.

Bubbly at Green Street Smoked Meats (Chicago, IL) : Disgorged May 11, 2015, 3 g/L of dosage. The effervescence here is pretty potent; maybe a little bit too exuberant. Coarse bead, with tons of chalkiness and a nice touch of sweet white fruit. This time around, I felt the wine was almost a bit too bracing and acidic. When I revisited this, it didn't seem like it fleshed out too much.

Nose: The nose is focused and aromatic with lemon zest, apples, pears, mineral tones, white fruits, biscuits, and some yeast. There is good depth and class while showing to the upper register. Taste: Medium bodied with high acidity. The acidity is refreshing, but youthful. The feel is lithe and balanced with lemon zest, apples, minerals, biscuits, and yeast tones. Overall: This is a lovely, young Champagne. There is a pristine quality that is really driving it. I would love to …

2008 Champagne at Oyster Bah (Chicago, IL) : Disgorged May 11, 2015, 3 g/L of dosage. This bottle showed so much better than the bottle I had last. The nose here just comes right at you and punches you in the face. Very perfumed, with tons of sweet lemon and almond. The palate has very taut acidity, and yet the fruit seems to have filled out a little bit better on this bottle. I know Suenen is a relative newcomer, …

Dinner at Osteria Langhe (Chicago, IL) : Disgorged May 11, 2015, with an illegible amount of dosage. Though this didn't have the biggest or fullest palate presence, there was still quite a bit to like here, with its bright acidity. There's some stone fruit on the palate, though it seems to be mostly eclipsed by the acidity here, and you have to look for it. A lot of chalky minerality as well -- this is good already, and given how …
