Hopper Creek Winery Cabernet Sauvignon

Nose of alcohol and perfume which doesn't do justice for the flavor. Needed 30-60 min to open. Dark purple color. Taste of cherry with plenty of oak that brings the perfume spice to the tongue. Good with food.

Harsh and tannic upon opening but once it opens up, a fucking delightful wine. Smooth as hell and full bodied to boot, the solid black fruit base gives rise to vanilla and cedar tones - Classic Cali Cabernet - that will only improve with age. Has all the characteristics to age well in the medium-term, would be a very interesting experiment.

A fruity, non-descript, generic, soft and approachable Cabernet that could be served to a large gathering without offending anyone or it might serve as an everyday drinker. Simple, uninspiring and straight forward.

“The faces of California Cabernet Sauvignon”, Flight 1, Wine 3: The wine was dark ruby, almost purple in colour and offered sweet mixed berry fruit (mainly dark), some chocolate, some coffee and a touch of mint on the nose. On the palate the wine showed sweet mixed berry fruit, dark cherry and vanilla, with fresh, medium-plus acidity, high, grippy tannin, some heat from the alcohol and average length.
