Unbelievable depth and complexity, ultra-traditional Chablis (or Petit Chablis) with notes of oyster shells, salt, citrus and liquid stones. So young and tight still and even more tight on day two, this can easily go another 5-10 years but it is intriguing as well right now.

Great entry level Dauvissat. Oyster shell, citrus, peet, grapefruit pith, tart and tangy and screaming for seafood.

Medium yellow color. Enticing nose of brine, crushed sea salt and grapefruit. Very tight on the palate, green fruit, citrus and then salty soil kicking in. Keeps a tight grip in the mouth, the structure here is impressive. The acidity keeps it fresh and vibrant. A great Petit Chablis with a great minerality and with years of life left.

When I first got this wine a year ago, I found it still very tight and closed, with acids that were piercing. Very tightly wound. Now that time has passed, it has opened up and become richer and rounder, but still with good acid balance, minerality combined with pear and floral flavors. A very nice wine, if not as complex as its Dauvissat siblings. Most of mine will be drunk within the next year as it is very good right …

Round green fruit, brine and then a late kick of slate on the finish. In a good spot right now, the fruit is warm and generous and spreads out on the palate. A wine in the old fashioned, traditional mold. Impressive wine, but perhaps hard to justify buying in the $30+ range even though it's rare.

Din din with Sandy and gang -- wow, nice surprise, especially as it warmed and aired in the glass. Lovely citrus meets a touch of all that exotic minty truffley goodness.

All oyster shell and brine on the nose, but as it warms, some tart apple and faint orange blossom. Fools you in that it gives the brief impression of medium weight and a touch of honey but very quickly implodes into a vortex of puckery acidity. Sometimes I wish I could draw a tasting note-this had a very steep burst of acidity, but the finish is equally precipitous in the other direction, dissipating rapidly. Very good for this level but …
