Drink not to cold, 10°C rather than 7°C. The Burgundy Cherry taste has transformed into slight bitterness and notes of coffee and ripe tannins. Aging nicely. Wonderful dark, beet root red color, even in a narrow Champagne fluit. This is a perfect winter fizz, sitting here at the window, watching the snow outside. Nice, nice stuff.
