Wagyu Dinner (La Maison J2) : Pale color with a lingering mousse. A lovely bouquet featuring chalk, mineral, green apple and apricot pit. Fine bead. Very 2008 with bright acidity and flavors of orchard fruit and citrus. As it breathes green apple qualities become dominant. Lovely. In terms of the pairing, it didn’t so much as match the wagyu as cleanse the palate of it, which wasn’t quite what we were looking for. Still, a very fine Champagne and one …

The wine exhibits a very oxidative nose, lacking freshness. On the palate, it has a medium-plus body with good complexity, though the flavor elements seem not well integrated. The finish is marked by high acidity, which adds sharpness.

Nose of Natural wine, after 1 hour of opening it became really great. toasty, brioche, acidity, and balanced taste. love the small but delicate bubbles.

A nice, still fresh blanc de noirs that I found to be very drinkable (disappears quickly) but that doesn’t quite live up to my memory from drinking it at the domaine five years ago. I think it has less fruit complexity now. I like it, but I don’t think it defends the price on tasting quality alone. Red berries, lemon, cream, bronze, and toasted bread.

(Bottle from the late 1960s) Some leakage showing when removing the foil, makes you wonder what will show. But as I slowly remove the cork I get that exciting psscht sound showing that there’s still some pressure left in the bottle. As I take the first sniff with the nose there’s an explosion of flavours hitting my face with black truffle, red currant jam and some fallen leaves in a very delicious way. Nice combination of refreshing lemon citrus acidity …

The worst of all previous bottles - time to drink up. Slight vinegar flavours now

This wine exhibits a super nature style with oxidative notes and ripe fruit aromas. It has a solid structure and is heavy on the palate. Ready to drink now.

A striking bottle that underwhelms on the palate. Strawberry cheesecake and lemon on the note, which is confirmed on the palate, but they're a faint echo of what you'd want, more like a memory of these things than an actual aroma. I enjoy this producer's other wines quite a bit, but this will be a pass for me going forward.

(Disgorged in February 2018, 50% Pinot Noir and 50% Chardonnay, dosage 8 gr/L) Youthful nose showing honey, citrus and minerals note and opens up with butterscotch and hazelnuts in a delicious way. Fresh citrus acidity on the palate with a butterscotch note on the smooth and creamy finish. This is still showing very well and the acidity keeps backing up the nice structure very well. Very dark color, which reflects the more noticeable “red wine” berry character here. Good, though not very complex— perhaps that will come with age.

(Disgorged in February 2018, 50% Pinot Noir and 50% Chardonnay, dosage 8 gr/l) Light yellow colour with fine bubbles, classic nose showing bread, minerals and lime citrus fruit. Nice and creamy on the palate with lemon zest bitterness, and with a nice and crispy mid before the very lovely grapefruit bitterness on the finish. This has evolved very well over the last year. Very pleasant now, but should reward further cellaring. (Best 2018-2033)

Doftar: röda äpplen och vetebröd. Brödighet, jäst med en vag oljighet, gula äpplen, och framförallt mycket citrus i slutet. Bra komplexitet och syra. Prisvärd, bra mycket bättre än den typiska instegschampagnen.

Annual Bolomey & Sprezzatura Wine Tasting (Restaurant Entrepot, Amsterdam, NL) : Trade tasting, brief note. Disgorged June 2017. Shows an interesting profile of freshness and nutty maturity, vinous and gastronomic, tightly wound, mineral energy, very good length.

Pistachios, fresh red fruits - mostly strawberries and raspberries. Medium finish. Good enough but I don’t love it. This producer’s “Carte d’Or” is cheaper and better.

Bright watermelon color. Intense aromas of chalk dust, limestone but rich cherries and strawberries, topped with biscuits. So bright and zesty on the palate, salty and mineral-laden, but crunchy white cherries, watermelon rind and juicy strawberries add depth. Salty, biscuit, fruit, lots of chalk and minerals. Beautiful stuff that would cellar nicely. Disgorged August 2017, based on 2014 vintage.

(Disgorged in November 2016, dosage 8 gr/l, 50% Pinot noir and 50% Chardonnay) Light yellow colour with a stream of fine bubbles. Classical nose showing bread, minerals, red apples and creaminess in a youthful way. Palate is lighter with nice layers of creamy acidity and with a crispy and nice and fresh bitterness on the finish. This was a good showing with a nice freshness and acidity to back it up through the coming years. Maybe not as intense and …

Pale yellow colour, intense bubbles around the glass. High aroma intensity, unripe yellow apples, red apple skin, toasty bread and nuts. With more time in the glass some red fruit character Comes out, at the same time the Apple fruit developes to sweeter notes. High acid profile with medium bodied mouthfeel. Expected a more elegant mousse with so long time on the lees (8 yrs). Same fruit and nuts on the palet. Long fininsh With some bitterness as with many …

Tasted on-site at the winery along with other wines, so this TN is rather short: quite a pink colour, very fruity, quite different from other Rosé champanges tasted so far

This was somewhat funky, and a tad advanced. I’m generally a Beaufort fan, this left me a bit cold. Nothing flawed, just lacking in charm.. B-

Beaufort's champagnes often remind me of apples. This one was no exception. It was very good, but not in the same league as the 95 opened earlier this year. I feel that this needs a bit more time to get to that stage.

Rich and dark colored pure Pinot Noir and you can taste it. Very much Pinot components and more red wine type than basic rose, but with bubbles. Should be enjoyed with meat dishes or red-fruits desserts.

Rosé champagne tasting (Brussels) : Light red colour. Rather powerful rosé but with a nice acidity grip and cool red berries (strawberries), nice mousse and a creamy caramel-like fruit.
