Turning into golden colour with still great freshness and complexity. Not your everyday wine, quite demanding in a good way. Developed more nutty and honeyed flavours, which adds to the complexity. Good stage to drink in my opinion.

2+ months after the prior: We couldn’t resist, and it was similarly lovely. As the note below observes, it benefits from not being too cold. Lovely over three nights —right out of the bottle, and developing along the path. We will try to avoid opening our remaining bottle for a few years.

PnP that was served a bit too cool. That said, as with most whites, much more expressive once it was closer to 55F than 45F; more interesting/enjoyable, too. Muted and a touch aromatically off putting upon opening. But oxygen and a bit of warming in the glass right this. Though it takes a good 20-30 minutes to go from somewhat vegetal/ vaguely Muscadet-like to bright and sea spray fresh with notes of apple peel and Meyer lemon oil and wet stone. Pale straw. Distinctively earthy/mineral. Bright, with refreshing acidity. A suggestion of savory creaminess. Beyond that, the two notes below describe some of its more specific characteristics well. Very enjoyable over three nights — and glad we have a couple more.

Quite a complex and interesting wine. Initial nose is a bit off-putting and reminds me of celery and condom, but with a tiny bit of air it opens to a saline, celery leaf and reductive earthy place that you find hard to stop drinking.
