00 | 04 side by side. Full mature. I initially preferred the 2000 as it was more showy and pronounced with mature white fruits, toasted nuts and earth. It did fade in the glass after ~30 minutes, so probably time to drink up.

So fine, complex and restrained. There’s something cool and stony here and the floral attributes are delicate and engaging. It has exquisite white peach fruit and the palate is unctuous, detailed and linear. The finish cuts like a steel blade then drives on and on. Sheer brilliance.

Tasted from barrel at the domaine. Only 1 barrel made for 21', and to be completely honest I don't have enough experience to rate this wine at this stage, but the acidity and energy is certainly there. Given the low yield, it's unlikely that I'll ever get to taste this wine again, but I'd love to give it another try 4-5 years from now as I imagine it will be spectacular.

Amazing. Extraordinary nose I can’t describe. Freshness, such complexity. A privelege to try.

Here, the serving temperature will be essential. Bottle opened 4 hours before serving. The nose is on floral notes very present when the wine is slightly too cold. Then when the wine warms up, Meursault wakes up, with notes of acacia honey and nougat. The mouth is full, with a juice that is fully expressed. Cold, the wine is crystalline and pure, as it warms up, it becomes dense but the freshness is magnificent for a 21-year-old wine. The tension …

Another terrific bottle of 2000 Roulot in perfect shape and demonstrating why we cellar WB. The colour is a deep but not dark green gold with a nose of lemon blossom, pear and white peach, nougat, oats and acacia honey. The palate is medium weight with a great texture and length led by a whip of citrus fruits introducing a complex line of savoury characters that culminate in a stony finish. There are touches of honey, butter and almonds that …

Another vinous memory of what White Burgundy should be almost all of the time ! This wine is in perfect shape at 19 years with a deepening green gold colour and a nose of lemon blossom, pear and white peach, nougat and limestone. The palate is medium weight with a great texture and length led by a citrus touch leading into a stony finish. There are touches of honey, butter and almonds that linger in the mouth. The cork looked …

From magnum. Rich, round and much more alive than expected. Lacking great definition, but still good weight here.

Purchased on release and in stonking form. It has some almond butter, citrus blossom and lemon on the nose. It is full and plump in the mouth, with a heart of sweet orchard fruits. There's some mineral and a finish that has a big squeeze of citrus. Great balance, proportion and elegance.

People at the table liked this a lot more than I did. Slightly oxidative. But by no means over the hill. Good fruit and balance, lots of secondary flavors. Carmel and butterscotch. Definitely liked this a little warmer. Brought out the nose much more. Have one bottle left and don't think there's any benefit to holding. Drink up.

Fully aged and ready to go. Darker yellow color. Still good acidity. This is very specific in flavor and taste but it is so good and balanced. Serving this slightly warmer brings out nuts, caramel and rocks. This is in a perfect spot but dont see further development - drink over the next few years.

Dark golden color. Showing its age but holding its own. The acidity is mostly gone which says drink these now. This is still in a good spot with a good amount of freshness and depth. Popped and poured and wondering if a little time to air out might not have helped. Have a few more of these which I will drink soon. 92-93.

Domaine Roulot Dinner (Nico Osteria - Chicago, IL) : Lots of sulphur on the nose. Bits of lemon, flint, and stone came through, though. Palate was great - just singing. Flavors were lithe, and layered and I thought it had a combination of the lushness of the 2003 Charmes with the depth and elegance of the 2001 Charmes. Very nice stuff.

Farve-a-thon 4.0. Saturday lunch and evening. Partial list. : Gorgeous palate, the nose was less pronounced. Very nice bottle, but actually expected more here.

Amazing wine. I know too much lately. In a wonderful place now and really where I love my white burg. All the elements are in balance and went wonderfully with grilled Yukon River salmon. Nice round wine but not overbearing in any way. Love this.

Brown Bag Wine Dinner at Two Chefs - Double Blind (TWO CHEFS, MIAMI, FL) : The wine looks yellow gold colored. The legs are medium. It smells like orange and clove. The body is medium. The wine has smooth texture. The wine finishes medium. The wine has medium acidity. Luis' White.

The pick of a smart Charmes bracket this was in a league of it's own. There's a little matchstick sulphur and toast that blows off then she's all pristine, pure white peach, white flowers and minerals. It has power with restraint and is drinking in a near perfect place.

If you look through the cork taint you see more cork taint but there is a wine underneath of good shape and piercing minerality, unfortunately this drinker who had bought this bottle on release and cellared it perfectly was a little 'pierced off' at the failure of a piece of bark.

Tasted 08/24/2005. Golden to amber in color. On the nose, buttered toast is predominant throughout the entire time of the tasting. Dang, this made me hungry for some breakfast food. On the palate, a little disappointing. Most tasters enjoyed it more than I did, but I thought it was slightly bitter, with a relatively short finish. Some honey, a little tropical fruit, but I could not get past the bitterness. Still, an interesting wine.
