Domaine Le Fay d'Homme (Vincent Caillé) X-Bulles

According to the producer's website, my bottle is apparently a blend of chardonnay, folle blanche & côt. It is purportedly biodynamic but I don't see any reference of that on the label. Although there is significantly more residual sugar than I would usually like, it is impressively well-balanced and not at all cloying. Despite the name, it didn't have many bubbles: this might have been an old bottle. Palate opens with fresh, tart flavours of sparkling mineral water, melon, apple, and guava. These are soon joined by smooth, creamy notes of tapioca, corn, and almond milk. Interesting combination of minerality and creaminess. I had it with prawns; I think it would be great with oysters.
