Nutty, toasty, almonds, seawater salinity. Has a big, thick glycerin body that coats your palate and gives it a long finish. Leaves you with the feeling of fruit skin tannins. Still, you don't really feel the 17% alcohol in it. A bit too intense and serious to guzzle down at a flamenco party. This one's more for contemplation. Excellent stuff.

Pale yellow gold. Inviting nose. Great intensity on the palate. Apple skin, nuts, almond, hey, chamomile, green olive, molasse and salt. Bone dry, and yet this Manzanilla finishes on an impression of syrupy sweetness. Very salty, with good body and great intensity, and very long. Hands down, one of the best Manzanillas I have had!

An Manzanilla Pasada (i.e. Manzanilla aged for longer than is typical) made by Almacenista Manuel Cuevas Jurado in Sanlúcar de Barrameda. Bottled from a cask that belongs to a 80-cask solera system. Average age of bottled wine is around 7 years. 17% alcohol. Pale straw-yellow color with a deep, burnished golden yellow core. Medium lemon colour. Lifted nose displaying aromas of acetaldehyde, chamomile, savoury yeast, almonds and hints of dried yellow apple. It is dry in the mouth with a bland acidity. Celebrando el cumpleaños de mi hermano empezamos por esta joyita que desapareció pronto de la mesa. Muy floral, 17% integradisimos, delicada pero a la vez con gran presencia de velo, dando notas de frutos secos en el final de boca junto con un toque que me encanta como de asfalto. El paso por boca es intenso de sabor pero, de nuevo, delicado en texturas, sabrosa y larga.

Sherry dinner (Frederikshøj) : At first quite extreme after the Jarana fino: sharp, kind of ultra fresh, salt and bitter - all this in an exciting and lively way. With air it becomes more approachable and even shows hints of golden fruit. Fantastic combination with a complex gambas dish. Outstanding.

Color is quite pale and youthful as manzanilla pasada goes. The nose is bright, fresh, chablis-like, with powerful notes of meyer lemon peel, oyster shell and sea breeze. On the palate, it literally makes you salivate - sappy, intensely salty, mouth-puckeringly citric, yet with an ever so sweet touch at the finish followed by a tail of chalk and salt. This is the best Manzanilla I have had for many years. Absolutely spotless nose of salt, orange peel, blue tang, green herbs and cheese. Dry, but with a richness and smoothness which is amazing for a sherry.

I had a bad bottle of this, but the second one was just phenomenal. There is an unmistakable manzanilla salty vibrancy here, but it's coated with a nutty crunchy praliné-like accent of oxidation. Fresh and mineral and yet barely hints at the richness of an amontillado.
